Tom Kha

(Coconut Chicken Lime Soup)


Ingredients

2 cans of coconut milk

2 T. Lime juice (to taste)

1 chicken breast sliced thin (about 1”long)

1 chicken bouillon cube

1 T. sugar

1 packet of Tom Kha soup seasoning (can be purchased at an Asian store) I prefer the Lobo Brand.

Vegetables of your choice such as carrots, onions, mushrooms (Button, Shitake or Portobello), green onions, tomatoes, red bell pepper, lemon grass, etc.

Instructions 

Put contents of one can of coconut milk in a medium size saucepan. Bring to a simmer. Add bouillon cube and Tom Kha paste. Stir to dissolve. Add Chicken and remaining can of coconut milk. Simmer for about 10 minutes. Add veggies. Add Lime juice and sugar to taste.  Simmer for another 10 minute or until veggies are tender.  Serve with Jasmine rice. Enjoy!
